Mia Ahlstroem grew up in Gothenburg, Sweden baking in the kitchen with her mother. She has carried on the tradition after moving to San Jose with her family seven years ago. Swedes are expert bakers. The craft is so important that a forth “meal” of the day is required in Sweden and known as “Fika” and consists of coffee and baked goods.

In this class, Mia will make two basic doughs with many variations. Both are perfect holiday treats. We’ll make:

A basic cookie dough and ~

  • Schackrutor: Chess Cookies with Cocoa

  • Brysselkex: Brussels Cookies

  • Kringlor: Crown Cookies with Swedish Pearl Sugar

A Sweet Cardamom Bread Dough known as Cardamom Vetebröd, two ways ~

  • With almond paste filling and cinnamon-butter filling shaped into beautifully shaped pastries

We’ll also have coffee and a few Swedish nibbles to snack on as we bake.

“Fika is a concept, a state of mind, an attitude and an important part of Swedish culture. Many Swedes consider that it is almost essential to make time for fika every day. It means making time for friends and colleagues to share a cup of coffee (or tea) and a little something to eat.”
