I’m thrilled to have Karen Diggs visit San Jose! Karen’s fermentation knowledge combined with extensive training as a chef makes her an excellent educator and fabulous fermentor. Karen finds creative ways to ferment foods as well as incorporate them in everything from snacks to cocktails!

10:00 -12:30 Nourish Your Microbiome Lecture with Q&A

  • Come and find out the connection between the microbes that are in your gut and how they affect your health, and why eating fermented foods can have such a beneficial affect for your gut, your brain, and even the planet! Karen will take you on a deep dive into the microbiome and share with you the latest scientific studies of why it is so important to have live-culture foods as well as explain the basic steps for making delicious sauerkraut, pickles and other fermented goodies.

12:30 - 1:00 Break

  • 1:00 - 4:00 Mastering Fermentation, a Hands on Fermentation class with Karen, Limited to 30 participants

    In this hands-on workshop, Karen will demonstrate how to make sauerkraut and pickles, as well as cover all the technical aspects of lacto-fermentation, so that you will master the art and science of preserving vegetables with good bacteria. You will also be tasting a wide variety of gourmet fermented items from Karen's own kitchen. There will be plenty of time to answer all of your fermentation questions.

  • Each participant will make their own sauerkraut with a selection of spices and herbs and take their fermentation creations home to enjoy.

Karen Diggs

Karen Diggs is a classically trained chef, nutritionist, food writer, and author of , Happy Foods – Over 100 Mood Boosting Recipes (Published by Viva Editions). Karen got hooked on fermenting and became fascinated with traditional fermentation crocks. It was her fascination with the simple but elegant crock design, combined with her work as a nutritionist encouraging her clients to ferment more of their own foods for health, that eventually led her to invent Kraut Source of which she is now the Chief Fermentation Officer.

Karen got her culinary degree at California Culinary Academy in San Francisco and attended Bauman College for their Certified Nutritionist program. She also taught at Bauman College as a culinary instructor and is currently teaching at Draeger's Cooking Schools and The Civic Kitchen in San Francisco.
