The Magic of Raw-Cooked Vegetables, a collaboration with yoga instructor Bindu Coulman

Bindu and I will partner in this class to discuss the value of eating seasonally. We will also touch on Ayurveda, a science of life (Ayur = life, Veda = science or knowledge).

About the class:

A traditional method for “cooking” when it’s too hot to be in the kitchen is salt curing. Besides being simple to prepare, this method preserves the nutrients and enzymes of the raw vegetables while giving them the texture of cooked ones, aiding in digestion.  

Salty, one of the six ayurvedic tastes, improves the flavor of foods, helps with digestion, lubricates tissues, helps to maintains mineral balance, helps to calm nerves and more. Because salt attract water, it adds radiance to the skin. We’ll use seasonal summer vegetables and turn them into delicious dishes without the heat of the stove.

We’ll make:

  • Summer Squash Crostini with Olive Oil, Lemon & Nuts
  • Japanese Inspired Fermented Vegetable Salad 
  • Salt Cured Tomatoes, Fried Pistachios, Orange Flower Water
  • Cabbage Slaw, Summer Peppers & Millet
  • Light samples will be served

Wine, beer and non-alcoholic beverages available for purchase.

About Bindu:

Bindu is a devoted yoga practitioner who has been deeply involved with yogic philosophy, psychology ,health and healing . Her inspiration comes from many teachers & methods as she continue to explore various holistic modalities that encompass nutrition , body movement and meditation.  She hope to share the knowledge with those who intending to maintain the outer balance through the inner harmony.  She is born and raised in India,where many in her family practiced Yoga & Ayurvedic medicine. Bindu is a level 2  certified yoga instructor and has been teaching at Club sport since 2011.
